What is Engineering in World of Warcraft?
The Engineering profession consists of combining world-gathered Leathers (Skinning), Smelted Mineral Bars and Stone (Mining) to create Tinkers, Guns, Goggles, Scopes, Repair Bots, Ammunition and Mounts.
Since The Burning Crusade expansion release, Engineering has doubled as a gathering profession. Using your trusty Zapthrottle Mote Extractor, you can extract elemental gasses from the air in most Outlands and Northrend Zones. The Gas Guide shows where you can find specific Gases.
Engineering is reliant on the Mining profession, while not required, Ore and Bars in the Auction House tend to be very expensive. The Mineral Guide gives details on how and where you can find all minerals and stone.

Engineering has two Specializations to choose from: Goblin Engineering and Gnomish Engineering. All recipes are learned by trainer, bought by vendor or dropped by NPCs in the game world.
Introduced in the Wrath of the Lich King expansion, Engineers gained the ability to Tinker some pieces of their gear, enabling them to have benefits other professions do not have. Tinker abilities act like enchants, therefore overwrite or can be overwritten by enchants; however, Tinkers do stack with gem sockets. Once a Tinker ability has been attached to an item, the item becomes soulbound, allowing Engineers to have the benefits exclusively.
Beginning at 380 skill and requiring a minimum level of 60, you can add a range of abilities to your gear:

While not producing the best Guns in the game, Engineering often provides a great stepping stone, as well as source of income for the Engineer, as the Guns are Bind-On-Equip. The Armor Plated Combat Shotgun, a great starter for Protection Warriors for Stamina and Defense, and Nesingwary 4000, often favored as a great starting ranged weapon for Hunters and DPS Warriors in 10-Man Naxxramas because it has a gem socket. These are the best Guns that Engineers can make thus far.
Throughout the Engineering profession there are Goggles which can be worn in the head slot on your character, requiring a minimum skill to use. At 350 skill in Engineering you can learn how to make Epic quality Goggles from a Trainer. The trainer will teach you recipes based on the type of gear you can use (Cloth, Leather, Mail or Plate) and also teach you a range of Goggle recipes based on the specs your character can talent into (Tank, Healer, Melee DPS, Spell Caster DPS). These recipes can be learned from the Outlands Engineering Trainers.
These Goggles were further upgradable with the addition of the Sunwell Plateau. When the Sunwell patch was released, so were a large range of new recipes for all professions. These new Goggles are either the best or Second best in the game for a head slot pre-Wrath of the Lich King.
Wrath of the Lich King has continued in releasing updated Goggles for Engineers, usable at level 72, trainable at 400 Skill Level from of the Northrend Engineering Trainers. While not regarded as best-in-slot as they once were, they are still great starting pieces for all classes and talent specs. It is likely these recipes will be upgraded in coming patches.

One thing that Engineers can offer and profit with on the Auction House is making Scopes. Scopes can be attached to Bows or Guns used by Hunters, Warriors and Rogues, and come in a variety of beneficial stats. Before 300 skill level, scopes simply increase the damage of a Bow or Gun; but as you gain 300 skill, scopes offer more than just additional damage.

Easily the best raid resource that an Engineer can offer; Repair Bots can be placed anywhere you can be throughout Azeroth or Northrend. There are three Repair Bot recipes: Field Repair Bot 74A, which can be learned from a scroll in Black Rock Depths; the Field Repair Bot 110G, the recipe which can be dropped off Gan'arg Analyzers in Blade's Edge Mountains; and Wrath of the Lich King released a new bot: Scrapbot Construction Kit, learned from completing a quest in Storm Peaks, quest can be started by looting a SCRAP-E Access Card from Library Guardians located north of the Crashsite (37, 45) in Storm Peaks. The 110G and Scrapbot versions provide Reagents, Ammunition, Poisons, and 1-3 each of Volatile Healing Potion/Volatile Mana Potion. The Scrapbot is a standard repairing vendor requiring cheap materials, often regarded as inferior to the 110G bot due to its lack of reagents and other supplies.
Patch 3.2 released a new servant which acts like a repair bot for your raid, while providing you exclusive Bank access. Jeeves can be used from your bags and he is not destroyed on use, but, you can only use him once an hour. To obtain the schematic for this butler robot, you will need to kill and skin Mechanical NPCs throughout Northrend, the schematic does not drop off the NPCs, rather it will be looted upon skinning. It has been said that higher level NPCs yield a higher chance to skin this schematic, therefore, the Library Guardians located north of the Crashsite (37, 45) in Storm Peaks are your best choice outside of Dungeons. There have been reports of how random the drop rate for this Schematic is, sometimes taking hours to drop.
The Engineering profession has many recipes for Bullets and Arrows, used in Guns, Bows and Crossbows. The Burning Crusade and Wrath of the Lich King expansions introduced a new array of Ammo, often using less materials. Currently, the high end Saronite Razorheads and Mammoth Cutters crafted by Engineers are the best ammo within the game. While the lower end bullets and arrows are not likely to sell well, the Wrath ammo will sell in either form. Selling ammunition is a great way for an Engineer to make a profit.
Patch 3.3 has added another set of ammo crafted by Engineers: Plans: Shatter Rounds and Plans: Iceblade Arrow. To be able to Scribe one of these recipes you will need to:
Believe it or not, there are Mounts exclusive to Engineers which you can create and use; both flying and ground mounts. A 60% speed Flying Machine, a 280% Turbo-Charged Flying Machine and Mechano-hog (Horde) or Mekgineer's Chopper (Alliance).
The Chopper and Hog are ground mounts, requiring 150 riding skill to use, binds to your character after use (meaning anyone can have it made for them). The bikes can reach 100% speed and allow one person from your party to ride along with you in the passenger car - player can be any level and does not require riding skill to ride along. The new Bike mounts come at a hefty price for their extravagant appeal. To craft a Bike, you will first require Exalted repuation with either the Horde Expedition or Alliance Vanguard to purchase the Schematic. Once you have purchased the Schematic, you are given the privilege to purchase the Vendor Bought materials from Roxi Ramrocket at K3 (40, 84) in Storm Peaks. While Engineering has its ways of profitting, having the exclusive ability to extract elemental gases from the air is a great money maker. Gas Guide
To get started, you must obtain your Zapthrottle Mote Extractor, this gadget is rewarded through completing a quest "The Zapthrottle Mote Extractor!". Requiring 305 skill in Engineering and level 58, the quest is similar for both factions, beside the fact it is given by seperate NPCs depending on faction: For Alliance K. Lee Smallfry in Telredor (68.2, 49.8) in Zangarmarsh; For Horde Mack Diver in Zebra'jin (33.9, 50.3) in Zangarmarsh. To complete the quest you will need to gather 15x Steam Pump Part from The Dead Mire in Northeastern Zangarmarsh (81.9, 38.1), once you have gathered 15 Pump Parts, you can return to your factions' Trainer, as a reward for completing the quest you will be given: Schematic: Zapthrottle Mote Extractor.
Materials required to craft the Extractor:

2x Fel Iron Casing (6x Fel Iron Bar)
2x Handful of Fel Iron Bolts (2x Fel Iron Bar)
1x Delicate Arcanite Converter (1x Arcanite Bar + 1x Ironweb Spider Silk)
Once you have your Extractor, you are able to use it to gather from the elemental gas clouds throughout Outlands and Northrend. The Extractor now has a built in tracking device, allowing you to see the gas clouds as yellow nodes on your minimap.

The Original version of World of Warcraft has the Engineering profession is broken down into two specializations: Goblin Engineering and Gnomish Engineering. With a minimum skill 200 and character level of 30, you are able to start the process of Specializing. Specialization is not recommended at this time due to the lack of useful recipes for either side.
Goblin Engineering focuses mainly on explosives, pre-Lich King, Goblin Engineers were the only ones who could use Jumper Cables, but since they seem to be moving away from specializations within Engineering, they released the Gnomish Army Knife, usable by all Engineers regardless of specialization.
Specialization starts with Tinkerwiz (Neutral) in Ratchet (63, 36) in The Barrens, Lilliam Sparkspindle (Alliance) in the Dwarven District (62, 30) in Stormwind City or Springspindle Fizzlegear (Alliance) who wanders the Tinkertown section in Ironforge. You will obtain the quest: Goblin Engineering and need to make your way to Nixx Springsprocket located in Gadgetzan (52, 27) in Tanaris. Before you make your way to Nixx, it is recommended you gather the materials needed for the next section of the questline:

Gnomish Engineering focuses on environment and character transformations, it is more of a fun side of Engineering.
Specialization starts with Tinkerwiz (Neutral) in Ratchet (63, 36) in The Barrens, Lilliam Sparkspindle (Alliance) in the Dwarven District (62, 30) in Stormwind City or Springspindle Fizzlegear (Alliance) who wanders the Tinkertown section in Ironforge. You will need to obtain the quest: Gnome Engineering, before you head to the following NPCs to continue the questline, it is suggested you gather the required materials for later in the questline. Alliance players will be referred to Tinkmaster Overspark located in Tinkertown (69, 50) in Ironforge and Horde players will need to visit Oglethorpe Obnoticus located in Booty Bay (28, 76) in Southern Stranglethorn Vale.
